 Practically Health Food Pizza!

Ingredients:

  • Clay Oven Baked Bread "old Fashioned" (Trader Joe's)
  • cholula (hot sauce) Or your favorite 
  • Spinach
  • zucchini (opt) slice very thin
  • mozzarella cheese (mix in sharp cheddar)
  • parmesan cheese
  • Hormel "Turkey Pepperoni" The way to go! No Meat....  or
  • Bradford/ bertolino pepperoni Sticks  
  • Chicken or turkey Italian sausage is a great change also!
  • black olives
  • roma tomatoes [opt]
  • Artichoke hearts and or
  • Avocado slices will work too! [opt]

  • warm oven to 395 degrees
  • place on cookie sheet Pre-Baked Bread Skin
  • spread with spoon Cholula Hot sauce
  • place spinach (without stems) over Pizza
  • place zucchini or Artichoke Hearts (1/16th inch slices or dices)(this is your option too!)
  • sprinkle mozzarella cheese to cover
  • sprinkle either sliced or diced pepperoni (I also put salami on my side, see picture)
  • sprinkle black olives, mushrooms  [opt] or for something new cut pickles into dices
  • sprinkle parmesan cheese
  • place in pre-warmed oven for 10 minutes cooking time will vary from one cook to another)
  •  cut into slices or dices
  • apply slices of roma tomatoes [opt]

my first menu as a professional cook, 

1969   Santa Cruz yacht harbor.  The cook/broiler was in the dinning room in front of the salad bar in those days.  I use to cook dinner for Jack O'Neal & family, Clint eastwood, and many other famious people here about once a week here. (prices have gone up a little)

Your Favorite salad you have not made yet...

In a salad bowl mix

  • assorted leaf lettuces and spinach [good hand full]
  • walnuts 1/4 cup
  • dried cran berries 1/4 cup might be too much
  • sliced apples [1 whole] 
  • artichoke hearts [4]
  • cheese/ goat/cheddar/ want ever you like works here..
  • crotons if you have them
  • red onion [1 slice] [opt]
  • tomato of your choice [1/2]
  • now toss this with Wishbone/Raspberry Hazelnut vinaigrette

This is great with a small glass chardonnay .....

any version of this salad will work for breakfast, lunch or dinner...

 

 

 

Spaghetti for Garlic Lovers......

This is so easy and so good you won't believe it !

First drive to "Trader Joes" it is a great Food Store and there should be one near you.

Grocery List: 

  • 1-2 jars of trader Giotto's  Roasted Garlic Spaghetti Sauce (with extra virgin olive oil)
  • 1 bag of trader Joe's Organic whole wheat Rotelle Pasta or
  • Now anything else is just going to be better but this is really all you need...
  • We pan fry Turkey meat balls stuffed with whole wheat bread
  • Add shitake or cap mushrooms just before the turkey balls are done
  • pour in the sauce let it simmer a couple minutes....
  • At this point you make up your plate either mix it all together or pour sauce over Pasta.... then we add shaved parmesan cheese and black olives

 

Arizona salad/ burrito

Ingredients:

  • ground sirloin / Ground Turkey
  • red peppers
  • zucchini
  • black olives
  • romaine lettuce/spinach
  • spinach
  • artichoke hearts
  • burrito skins
  • cheddar cheese
  • roma tomatoes
  • salsa
  • cholula hot sauce
  • avocado

 

  1. In a deep frying pan place 2-3 tablespoons of light virgin olive oil and red pepper seeds

  2. cook small inch chunks of sirloin or Chicken Sausage or turkey meat.  then add red pepper slices & zucchini (1/2inch).  onion can also be added at this time (optional).

For a Salad:

  1. make a bed of lettuce using romaine and spinach

  2. place cooked ingredience in center of lettuce

  3. cover with cheese, black olives, avocado, artichoke hearts, roma tomatoes,  & salsa on top  

  4. serve with cholula hot sauce! ..... Bam!

for a burrito of Quesadilla:

  1. Fold two burrito skins in half with cheese in a warm pan (lightly covered with olive oil), cook on both sides until cheese breaks down

  2. fill with ingredients above, cut and serve with cholula hot sauce!  .... Bam _________________________________________________________________________________________________________________________________________
